This cake is a stunning centerpiece for any dessert table. The chessboard pattern will impress even the most calculating connoisseur. I love challenging myself to find and conquer difficult recipes. After a trio of tries I can finally ‘check’ this one off of my list.

Chessboard Cake

Fun and very impressive for those of all ages!

Ingredients

  • Fluffy White Cake recipe below
  • Black Dark Chocolate Cake recipe below

Glaze for Layers

  • 4 tbsp butter
  • 3/4 cup dark chocolate chips
  • 2 cup confectioners sugar
  • 1/2 cup milk

White Frosting

  • 8 oz cream cheese softened
  • 1/2 cup butter softened
  • 1/2 cup shortening
  • 1/2 cup milk
  • 4 cups confectioners sugar
  • 1 tsp vanilla extract

Instructions

  • Using 1", 4" and 6" circular cutters, divide each cake layer into 1" rings. See photos.
  • Alternating colors and sizes make your first chessboard layer by piecing together the largest white cake ring, the 2nd largest black cake ring, the 3rd largest white cake ring and finally the smallest black cake ring. Your first layer is complete.
  • For the glaze, melt the butter and chocolate chips in a saucepan over low heat. Remove from heat and add confectioners sugar and milk. Once thoroughly combined and smooth, pour into a pastry bag with a large tip opening.
  • Drizzle the chocolate glaze over the first alternating ring layer of cake.
  • For your second layer: piece together the rings, starting with the largest black cake ring, the 2nd largest white cake ring, the 3rd largest black cake ring and finally the smallest white cake ring. Your first layer is complete. Drizzle the glaze over the second layer of cake rings.
  • Repeat the first two layers, glazing in between each.
  • For the White Icing: cream together the cream cheese, butter and shortening. Slowly add 2 cups of confectioners sugar. Add milk and whisk until smooth. Slowly add the remaining two cups of sugar.
  • Frost the cake and serve!

Fluffy White Cake

This white cake is as light as air and tastes so fresh!

Ingredients

  • 6 tbsp butter softened
  • 2/3 cup vegetable oil
  • 2 cups sugar
  • 3 tsp almond extract
  • 3 cups all purpose flour
  • 1/2 tsp baking soda
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 cup milk
  • 6 egg whites

Instructions

  • Preheat the oven to 350°F. Grease and flour two 8" cake pans.
  • Cream the butter. Add the sugar, oil and almond extract. Mix.
  • Add flour, baking soda, baking powder and salt. Mix.
  • Add milk and stir until combined. Set batter aside.
  • In a separate bowl, whip egg whites until they are foamy and peak when you remove the mixing whisk.
  • Gently fold the egg whites into the batter until thoroughy combined.
  • Divide the batter into the two prepped cake pans. Bake until a cake tester comes out clean, about 24-32 minutes.

Black Dark Chocolate Cake

Deep, dark and rich, this cake is the perfect base for an array of icings.

Ingredients

  • 2 1/2 cups all purpose flour
  • 2 cups sugar
  • 3/4 cup black cocoa powder
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1 tsp salt
  • 4 eggs
  • 1 1/2 cup milk
  • 1/2 cup vegetable oil
  • 3 tsp vanilla extract
  • black food coloring if desired
  • 1 cup hot water

Instructions

  • Preheat oven to 350°F. Grease and flour two 8" pans.
  • Combine the flour, sugar, cocoa, baking soda, baking powder and salt.
  • Add the eggs, milk, vegetable oil, vanilla and food coloring. Once thoroughly mixed, slowly add the hot water until combined.
  • Divide into the two prepared cake pans.
  • Bake for 24-32 minutes or until a cake tester comes out clean.
