Healthy Maple Granola
This granola is so tasty that it's hard to believe that it's a fairly healthy snack and incredibly easy to make. I definitely will be making more of this in the future and crossing store bought granola off the grocery list!

- 2 cups old fashioned oats
- 1/3 cup coconut oil
- 1/3 cup maple syrup or honey
- 1 cup raw cashews chopped
- 1 cup raw pistachios chopped
- 1/2 cup pumpkin seeds
- 1/2 cup flax seeds ground
- 3/4 tsp salt
- 1 tsp cinnamon
- 1/2 tsp ginger powder
- 1 cup dried apricots chopped
- 1/3 cup dark chocolate optional
Heat oven to 350
Combine all ingredients except the apricots and chocolate. If using roasted nuts, add those later as well.
Bake for 25 minutes.
Let cool completely before adding apricots and chocolate. Enjoy!!
