Dirty Martini Flatbread

These delectable flatbreads embrace every good part of a dirty martini: vodka sauce, blue cheese and olives. 

Pizza Crust

Combine yeast, sugar and warm water. Let sit until it becomes bubbly, about 10 minutes. Add the salt and oil. Add flour, 1/2 cup at a time. Let rise, about 45 minutes to 2 hours.  

Nerdy Tip

take the temperature of the water- too hot water kills the yeast, too cold and it won’t activate. 110 degrees is ideal and worth measuring. 

Vodka Pizza Sauce

Sauté onion in butter until clear. Add vodka and simmer to reduce, about 10 minutes. Add the rest of the ingredients. Simmer for 30 minutes. 


Making the Pizza

Preheat oven to 400 degrees. Roll out a handful of pizza dough on a heavily floured surface. Place the rolled out crust onto a baking sheet. Brush with olive oil and pierce throughout with a fork. Bake for 5 minutes. Spoon sauce onto the dough. Top as desired. I love onions with my blue cheese and olives. Mushrooms are great too!  Bake until the crust is golden brown and the cheese is melted, about 8 minutes.

Nerdy Tip

the thinner the crust, the crispier it will beuse cornmeal to dust the baking sheetbake on a stone, or better yet- the grill!
