Arancini with Leftover Rice
I now look forward to leftover rice. These little balls are so delicious and comforting! Share on facebook Share on twitter Share on linkedin Share on pinterest Share on email Share on google A classic Italian Great Depression recipe, this uses leftover rice and breadcrumbs. “Elsa learned—to her surprise and to her mother-in-law’s—that she wasn’t a quitter. She woke up each morning well before her husband and got into the kitchen in time to make coffee. She learned to make and eat and love food she had never heard of, made from ingredients she’d never seen—olive oil, fettuccine, arancini, pancetta.” Kristin Hannah, The Four Winds Tweet If you like this…

Brooklyn Lox and Cream Cheese Bagel Balls
These Bagel Balls are so fun! They’re a NYC deli stop in a bite. Smokey lox, cream cheese and briny capers surrounded by chewy everything bagels create a classic taste in a fun new way. These are also great for on the go eating in the car. My bagel sandwich comes up for pickup. I take the white paper bag, thank the woman and make my way back down toward the water. Brooklyn Bridge Park is less a park and more a stretch of grass. The benches are full, and I pop down on a rock, right by the water’s edge. I open up my sandwich and take a bite.…

Apple Cider Donut Holes Recipe with Caramel, Apple or Maple Whiskey Filling
Apple Cider Donut Holes with Apple Pie, Caramel, Whiskey Maple filling….. This Orlando girl misses fall. To me, the best part of fall is the apples (besides going back to school. Yes, I have always been nerdy!) Apple picking and fair foods like apple strudel and hot apple cider bred nostalgia. Here in Florida it is hot and summery. So I celebrate the next best way I know how- baking with apples. These apple cider donut holes are AH-mazing! Alone they are delicious but filled…..it just hits different. The whole batch was gone in less than 24 hours and that’s even without the hubby home to help. (He was out…

Dirty Martini Flatbread

Let sit until it becomes bubbly, about 10 minutes. Add the salt and oil. Add flour, 1/2 cup at a time. Let rise, about 45 minutes to 2 hours. Nerdy Tip take the temperature of the water- too hot water kills the yeast, too cold and it won’t activate. 110 degrees is ideal and worth measuring. Vodka Pizza Sauce 1/4 cup butter 1/2 onion, diced 1/2 cup vodka 1 can tomato paste 1 can tomato sauce 3…

Caramel Cake Petit Fours
The Cake This is basically a pound cake with a few minor adjustments, including extra eggs. Eggs are the magical ingredient. Their job in this batter is to provide structure. When heated, egg proteins coagulate and give stiffness to the cake- all the better for shaping our little petite fours. Nerdy Tips It’s important to cream the butter and shortening first then mixing in the sugar. It gives the end product structure by beating air into the butter, while the sugar helps to hold the air by dissolving, leaving little bubbles throughout the fats. Mixing in the eggs one at a time helps to create a lighter, spongier cake. Use a…
