Lemon Cookies

Ingredients
- 1 cup butter, unsalted
- 1 3/4 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/4 cup fresh squeezed lemon juice
- 1 tbsp lemon zest
- 5 drops yellow food coloring
- 3 cups flour
- 1 1/4 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 1/4 cup sugar for rolling cookies
Instructions
- Heat oven to 350
- Cream the butter and add sugar.
- Add eggs. Mix.
- Add vanilla, lemon juice, zest and food coloring. Stir.
- Stir in flour, baking powder, soda and salt.
- Roll Tablespoon size balls into sugar.
- Bake for 7-8 minutes until the bottoms are golden. Enjoy!!
