Champagne Cupcakes

Pop the champagne a little early because you’re going to love these delicious delicate bites. Fresh strawberry cupcakes with an elegant champagne frosting are perfect for a New Year’s Eve countdown! Recipe makes 24 cupcakes.

Strawberry Cupcakes

  • 1 cup unsalted butter, room temperature
  • 2 cup sugar
  • 1/2 cup whole milk
  • 2 cup strawberry puree
  • 1/2 cup strawberry jam
  • 4 egg whites
  • 2 eggs
  • 2 t vanilla
  • 3 cups flour
  • 4 t  baking powder
  • 1 t  salt
  • red food coloring

Cream the butter and add sugar. mix in the rest of the ingredients. add food color as needed. Bake at 350 for 8-10 minutes, until a toothpick comes out clean. 

Champagne Frosting

  • 1 cup champagne
  • 1 cup unsalted butter, room temperature
  • 4-5 cups confectioners sugar
  • 1 t  vanilla
  • 1/2 t  salt

Bring the champagne to a boil. simmer over medium heat until reduced, about 12-15 minutes. cool completely. cream the butter and add 2 cups of sugar. when the sugar and butter are completely mixed add 2 more cups of sugar. when mixed completely again, add cooled champagne, vanilla and salt. add more sugar, 1/4 cup at a time, until the frosting has a thicker consistency that peaks when you pull the beater out. 

Nerdy Tips

  • make sure the champagne reduction has cooled completely before adding to the butter and sugar mixture (or the butter will melt and your frosting will turn to soup!)
  • use the champagne reduction to brush the tops of the cupcakes while they cool
