Smoked Ricotta and Quail Egg Ravioli

    November 14, 2020 / 1 Comment

There is nothing like the taste of a homemade pasta- talk about comfort food! Fill that pasta with the deep flavor of smoked cheese nesting tiny golden egg yolks and we are talking next level! I’ve got amuse-bouches.” Danny ticks the courses off on his fingers. “Then the truffled soup for starter. Then venison haunch for the carnies and mushroom ravioli for the veggies. Then créme brûlée for dessert. And then the cheese. Authentic Pesto Pasta with Parmesan

    October 21, 2020 / 0 Comments

You can make this pesto pasta as easy as you want. Buy the pasta and the pesto. Boil the pasta, drain and smother with pesto. Easy 10 minute dinner. No judgement. I do it the easy way often. Basically, it’s worth the extra work those times you can afford it.  Do you want red sauce or pesto?” he asks from the kitchen. “Aaron?” I try. He smiles. “Yes?” “Pesto,” I say. I walk toward the kitchen. It’s 2025,…

These taco bites are perfect for any party- even a party of one! The wonton shells add the perfect crunch and each person can add whatever toppings they desire (if you choose to share!). The possibilities are endless! “I made tacos.” I smile at him. “Is it time to eat already?” He laughs. “It’s after ten. It was time to eat three hours ago.” I look at the clock on the computer. How did I lose track of time? I guess that happens when you’re reading about a psychotic woman abusing…

    Mushroom & Leek Risotto

    February 27, 2020 / 0 Comments

Creamy and flavorful, risotto is a special dish. It takes a little time and a lot of TLC, so I like to make double to guarantee leftovers! Nerdy Tips Don’t be intimidated!! If you have the time, you can make this!! Patience is the most important part of a good risotto. Use vegetable stock to make this an easy and creamy vegetarian dish. Make sure your stock is warm, not boiling. If you don’t want to use wine make sure to replace with an acid like lemon juice. I make a double batch for twice the reward (dinner AND leftovers) with the same amount of effort. To reheat those leftovers,…

    Chicken Pho Soup

    February 25, 2020 / 0 Comments

I have never attempted this soup before but now that I’ve made it, it’s on our dinner list. Spicy and comforting, this soup is full of flavor and yet clean and light. Nerdy Tips Every article I read on making pho suggests using Red Boat Fish Sauce. Charring the ginger and onions will give this soup an authentic flavor. Many people enjoy a splash of Sriracha in their pho. Nerdy Facts Pho is mainly served for breakfast in Vietnam. Pho was influenced by both French and Chinese cuisine. It made its first appearance in the late 1800s. Pho is pronounced “fuh”
