Dairy free Cauliflower Leek Soup
This soup is fall in a bowl. With cinnamon and chili powder spices, it’s automatic comfort food. It’s wholesome, healthy, gluten free and dairy free. It’s almost entirely vegetables and seasoning but at the same time it’s so creamy. Go ahead and cross granola off of your grocery list. This healthier version is so easy to make! Maple flavors paired with warm spices create a comforting but healthy granola. I love this as an evening snack with my tea but it’s also great on any of my smoothies. I created this granola out of a list of recommended iron rich foods. I love this time of year when the last of the tomatoes come off the vine and football games grace the tv. My husband loves to grill on game days and this salsa is a great companion to meats and veggies as well as chips. Avocado Tuna Salad
This is a super easy and fresh lunch or dinner idea. 15 minute prep time, serves 4. Ingredients 10oz canned tuna 1 English cucumber, diced 2 medium avocados, diced 4 stalks celery, diced small red onion, diced 1/4 cup cilantro, chopped 2 Tbsp lemon juice 2 Tbsp olive oil 2 Tbsp mayonnaise 1 tsp garlic powder salt & pepper to taste bread; I used a sturdy Sourdough Mix together all ingredients except Sourdough. Spread onto bread and enjoy!!
