Nerdy Hummus Dressing
This hummus dressing is the perfect topping for salads, brown rice, roasted veggies and so much more! Hummus is made mostly from chickpeas which pack quite a nutritional punch. A mere tablespoon has 2 grams of fiber and 2 grams of protein. They’re also rich in potassium, calcium, magnesium and iron. Avocado Tuna Salad
This is a super easy and fresh lunch or dinner idea. 15 minute prep time, serves 4. Ingredients 10oz canned tuna 1 English cucumber, diced 2 medium avocados, diced 4 stalks celery, diced small red onion, diced 1/4 cup cilantro, chopped 2 Tbsp lemon juice 2 Tbsp olive oil 2 Tbsp mayonnaise 1 tsp garlic powder salt & pepper to taste bread; I used a sturdy Sourdough Mix together all ingredients except Sourdough. Spread onto bread and enjoy!!
