Authentic Pesto Pasta with Parmesan
You can make this pesto pasta as easy as you want. Buy the pasta and the pesto. Boil the pasta, drain and smother with pesto. Easy 10 minute dinner. No judgement. I do it the easy way often. But….. in the Gourmet version there’s a little more time involved but your tastebuds will dance a tarantella. (For the curious, that’s an Italian folk dance with lots of spinning and tambourines.) Basically, it’s worth the extra work those times you can afford it. Do you want red sauce or pesto?” he asks from the kitchen. “Aaron?” I try. He smiles. “Yes?” “Pesto,” I say. I walk toward the kitchen. It’s 2025,…

I love this easy, fun dinner! Sometimes I mix quinoa into the beef to lighten things up a bit. The possibilities are endless! “I made tacos.” I smile at him. “Is it time to eat already?” He laughs. “It’s after ten. It was time to eat three hours ago.” I look at the clock on the computer. How did I lose track of time? I guess that happens when you’re reading about a psychotic woman abusing…

Where the Crawdads Sing ~ A Book Journey
Have you ever read a book so intense that you wanted more? Something about Crawdads sparked this need inside of me to explore for myself. It was just so beautifully written that I wanted more of Kya and the salt marsh. Sometimes books just aren’t enough for this nerdy girl. I had to see what Delia Owens so vividly wrote about. I packed my bags and went on my first Nerdy Gourmet adventure. Hence, book inspired travel and food became my passion. Kya’s Blackberry Jam
She twisted the cloth bag with the jam so that it was wrung tight and knotted against the jars. As the boys drew even with the thicket, she swung the heavy bag and whacked the closest one hard across the back of his head. Ma’s Fluffy Southern Biscuits
Kya insisted on keeping the old wood-stove, firewood piled next to it, because it heated the shack, but mostly because it had baked a thousand biscuits from her mother’s heart. Delia Owens, Where the Crawdads Sing Tweet Share on facebook Share on twitter Share on linkedin Share on pinterest Share on email Share on google These southern biscuits are rich and fluffy, just like Kya’s ma used to make. Owens mentions biscuits so often throughout Crawdads that I had to indulge. Now, they are a staple around here on the weekends with our eggs and bacon. I hope you enjoy- they come from my heart! I made these for Where…

Gluten Free Chicken Piccata with Zoodles
I must admit, I was very skeptical of any noodle shaped vegetables replacing my pasta. I held off on the zoodle faze for a very long time but they have withstood the test of time. As I started cycle syncing and being more aware of how gluten affected my gut, I decided to buy some zucchini. This dish is delicious and healthy! The zoodles keep it light and the chicken is gluten free but the piccata keeps it tasty. Share on facebook Share on twitter Share on linkedin Share on pinterest Share on email Share on google The piccata flavors keep this dish tasty despite being so healthy and light!…

Apple Cider Donut Holes Recipe with Caramel, Apple or Maple Whiskey Filling
Apple Cider Donut Holes with Apple Pie, Caramel, Whiskey Maple filling….. This Orlando girl misses fall. To me, the best part of fall is the apples (besides going back to school. Yes, I have always been nerdy!) Apple picking and fair foods like apple strudel and hot apple cider bred nostalgia. Here in Florida it is hot and summery. So I celebrate the next best way I know how- baking with apples. These apple cider donut holes are AH-mazing! Alone they are delicious but filled…..it just hits different. The whole batch was gone in less than 24 hours and that’s even without the hubby home to help. (He was out…

The Girl Left Behind Book Review ~A Modern Police Procedural
M William Phelp Crime Fiction, Suspense Thriller Conneticut, present N/A Book Review The Girl Left Behind 4.3/5 A teen girl goes missing from a small farm town in Connecticut. Detective Linda Kane is faced with finding Cassie despite the case triggering childhood memories of her best friend’s disappearance. The Girl Left Behind is intense at the start- descriptive, free flowing and fast paced. I had an immediate connection with the characters with whom Phelps spent a lot of time building depth. I’m very excited that Detective Kane could be a reoccurring character with her own series. Apparently, the full title is The Girl Left Behind (A Linda Kane Thriller, Book…

The Flatshare Book Review ~ Romantic Roomates
by Beth O’Leary narrated by Carrie Hope Fletcher and Kwaku Fortune set in West London, present day Book Review The Flatshare is the definition of a romcom. It’s sweet and funny, in a witty way and a breath of fresh air after all the deep thrillers I’ve read recently. Tiffy’s struggle in life and love is totally relatable to everyday life. I found myself laughing out loud during walks around the neighborhood. O’Leary is clearly talented, her characters full of life and thoroughly defined. Each of their personalities are so distinctive that I could open the book to a random page and tell immediately if it was Tiffy or Leon narrating.…

Gourmet Mushroom Quesadillas
I added “Gourmet” to the title because these are not your everyday quesadillas. These are “make them when company comes over” mushroom quesadillas. Gruyere cheese and an assortment of in season mushrooms kick this dish up a few notches. Have you tried this recipe?? I’d love to hear your feedback. Please comment and rate!
